Coconut Peanut Butter Apple Slices (Samoa Apples)

These coconut peanut butter apple slices aim to replicate a classic cookie in a healthy way, and while they don't do that completely, they are an incredibly delicious snack.

Ingredients
  

  • 2 large apples
  • 3/4 cup peanut butter
  • 1/2 cup shredded coconut
  • 2-4 tbsp honey, to taste
  • 2 oz chocolate, cut into small pieces
  • 1 tbsp lemon juice

Instructions
 

  • Slice the apples into 1/4 inch slices. If you have an apple corer, you can core the apples first. If not, use a spoon to scoop the center out of the apple slices, making apple rings. Toss the apple slices with the lemon juice.
  • Toast the coconut flakes. Heat a pan over medium heat and add the coconut. Toast, stirring every minute or two, until lightly browned and toasted. Keep an eye on it, the coconut can burn quickly.
  • Mix together the peanut butter, toasted coconut, and honey to taste.
  • Use a paper towel to dry the apple slices well. Spread the peanut butter mixture onto the apple slices. Transfer to a parchment paper lined cookie sheet
  • Melt the chocolate, either by using a double boiler or microwaving in 20 second increments and stirring well in between until the chocolate is melted. Use a spoon to drizzle the melted chocolate over the apple slices. Place in the fridge until chocolate is set, about 20 minutes. Store leftovers in an air tight container in the fridge.
