Prosciutto Wrapped Dates

These prosciutto wrapped dates are the perfect balance of sweet and salty, stuffed with goat cheese and topped with a thyme honey butter.

Ingredients
  

  • about 20 dates, pitted
  • 6 oz goat cheese
  • 5-6 slices prosciutto
  • 2 tbsp butter
  • 4-5 sprigs fresh thyme
  • 1 tbsp honey

Instructions
 

  • Preheat the broiler, or oven to 500.
  • Using about a teaspoon of goat cheese, stuff each date in the opening made by removing the pit.
  • Slice the prosciutto lengthwise and then in half, making 4 pieces out of one piece. Wrap each piece around one of the stuffed dates seam side down. Place wrapped dates on a baking sheet and broil until prosciutto is beginning to crisp, 5-10 minutes.
  • While the dates bake, make the thyme honey butter. Strip the thyme leaves off the stems. Melt the butter, add thyme and honey, and whisk to combine.
  • Once the prosciutto on the dates has crisped up, remove them from the oven and drizzle them with the thyme honey butter before serving.
