Tomato and Cheddar Sandwich with Basil Mayo
This super simple tomato and cheddar sandwich will make great use of all those fresh August tomatoes, and has an easy-to-make and herb-packed basil mayo.

For the sandwich
- 1 large ultra fresh tomato, sliced thickly
- 4 slices really great bread
- 4 oz sharp cheddar, sliced thickly
- basil mayo (see recipe below)
- salt and pepper
- fresh basil (optional)
For the basil mayo
- 1/2 cup mayo
- 1/2 cup fresh basil leaves
- 1 clove garlic
- juice of one lemon
- salt to taste
For the basil mayo
In a small food processor or using an immersion blender, blend mayo, basil, garlic, lemon juice and salt to taste.
