Street Fair Mint Lemonade
This mint lemonade is an herbaceous and refreshing treat inspired by my favorite part of NYC street fairs: the fresh lemonade stand.

- 1 cup fresh lemon juice (about 5-7 lemons)
- 1 cup sugar
- 1 cup fresh mint leaves
- 5 cups water
- lemon slices and mint leaves for serving
Make the mint simple syrup. Bring 1 cup of sugar and 1 cup of water to a boil over medium heat. Stir well to dissolve sugar. Reduce to a simmer and cook for 5 minutes. Remove from heat and add the fresh mint leaves. Let the mint steep in the syrup for 20 minutes. Remove the mint leaves and allow the syrup to cool.
In a large pitcher, stir together the lemon juice and water. Add 1/2 cup of the simple syrup to start and stir to combine. Depending on how sweet you like your lemonade, add more of the simple syrup as needed. Serve over ice with fresh lemon slices and mint.
