Three incredibly simple yet impressive one bite appetizers featuring chips: smoked salmon potato chips, salami chips with ricotta and honey, and chorizo chips with corn salsa.
In my house, it wouldn’t be New Year’s Eve without three things: The Twilight Zone, a jigsaw puzzle, and appetizers. For the past few years, I’ve left behind the wild New Year’s of my twenties and settled into this cozy New Year’s tradition with a newfound appreciation for the people that I actually want to be surrounded by when the clock strikes midnight. And as much as I love The Twilight Zone and can lose myself for hours in a 1,000-piece puzzle, I think my favorite part of this tradition has got to be the appetizers. This year I tried my hand at these three super simple semi-homemade one-bite appetizers, and they did not disappoint.
I made these apps in a matter of minutes, but they still seemed somewhat special. And they’re all based around one of my favorite guilty pleasure snacks: the chip. Each one is a perfectly balanced bite of food, impressive enough for any party or gathering (not just New Year’s), and so easy to whip up.
THREE ONE BITE APPETIZERS (WITH CHIPS!)
Smoked Salmon Potato Chips
The first one of these one-bite appetizers is probably the easiest to make. Simply top a potato chip with a slice of smoked salmon, a dollop of creme fraiche and a sprig of fresh dill. Smoked salmon was a staple of my childhood, and while I didn’t always like it, its salty-smoky flavor profile is now one of my favorites. The smoked salmon and the potato chip are both super salty, and the dollop of creme fraiche and fresh dill perfectly balance that saltiness with some creamy sweetness.
Salami Chips with Ricotta and Honey
These salami chips are super easy to make: simply air fry (or bake on a high temperature) thinly sliced salami for a few minutes until it is perfectly crispy. Then top with a dollop of ricotta, a drizzle of honey, and a crack of black pepper. Ricotta with honey and black pepper (on pretty much anything) is a staple in my household, and adding it to these salami chips was a no-brainer. It balances the savoriness of the salami with a bit of sweetness and a rich creaminess.
Chorizo Chips with Corn Salsa
I made these chorizo chips in the same way as my salami chips: air fried thinly sliced cured chorizo until crispy. Then I topped them with a dollop of corn salsa. This balances the spice of the chorizo with some sweetness, while playing up the chili pepper, garlic and coriander that are inherent in the chorizo. Trader Joe’s makes a fantastic corn salsa, but you could use any brand of corn salsa (or other salsa) or even make your own.
Trader Joe’s has a fantastic selection of frozen appetizers that I love to use for any gathering. But they are also the perfect place to get all the ingredients for these (semi) homemade one-bite appetizers. I particularly like their pastrami smoked salmon or everything bagel smoked salmon, they have some super creamy ricotta and creme fraiche, and some of my favorite corn salsa.
Smoked Salmon Potato Chips
Ingredients
- potato chips
- smoked salmon
- creme fraiche
- fresh dill
Instructions
- Assemble one-bite smoked salmon potato chips by layering a slice of salmon, a dollop of creme fraiche and a sprig of dill on a potato chip.
Salami Chips with Ricotta and Honey
Ingredients
- thinly sliced salami
- ricotta cheese
- honey
- black pepper
Instructions
- Make salami chips by air frying thinly sliced salami at 350 until crispy, about 10 minutes. Allow salami chips to rest before assembling; they will continue to crisp up.
- Assemble by topping salami chips with a dollop of ricotta, a drizzle of honey and a crack of black pepper.
Chorizo Chips with Corn Salsa

- corn salsa (your favorite brand)
Instructions
