Ingredients
2 eggs
1 tomato, diced
2 tablespoon red onion, diced
cilantro, minced
½ cup red beans
¼ cup shredded cheddar cheese
1 avocado, sliced
Meat of choice (bacon, sausage, chorizo), cooked and crispy
2 tortillas
Instructions
Cook eggs your favorite way (scrambled, over easy, sunny side up) and melt cheddar cheese on top. Top each tortilla with avocado, beans, meat, tomato, onion, egg and cilantro. Devour and feel the hangover melt away.
