Eggs in Purgatory, Shakshuka, whatever you call it, these poached eggs in tomato sauce are undeniably easy, delicious, and perfect for any time of day.
Ingredients
1 small onion, diced
2 cloves garlic, minced
1 14.5 oz can tomatoes, either whole, crushed, diced, or tomato sauce
2-3 fresh tomatoes, diced, optional
1 tablespoon tomato paste
spices of your choice (I used smoked paprika, but you can use cumin or dried herbs)
4 large eggs
1 bunch fresh parsley or cilantro for garnish, optional
