Pantry Staples: Spanish Style Smoky White Bean Tapas

Ingredients
  • 1 can white beans, such as cannellini beans
  • ½ small onion, diced
  • 3-4 garlic cloves, minced
  • 4 anchovy filets (can be left out for vegetarian version)
  • 1 tablespoon tomato paste
  • ½ tablespoon smoked paprika
  • 2 tablespoons olive oil
  • salt and pepper
  • fresh parsley and chives
  • Bread or pita chips for serving
Instructions
  1. Over medium heat, saute onion, garlic, and anchovy filets in the olive oil, stirring to break up the anchovies, until softened and browned, about 7 minutes. Add the smoked paprika and tomato paste, stirring to combine, and cook another 3 minutes.
  2. Drain half the liquid from the beans, leaving some to create a sauce. Add the beans to the pan and stir to combine. Cook until beans are heated through, 5 minutes. Season with salt and pepper and garnish with parsley and chives. Serve with crush bread or pita chips.
