Matzo Brei

Matzo Brei is a cross between french toast and scrambled eggs/a fritatta, and can be served with any of your favorite toppings!
Ingredients
  • 6 sheets of matzo
  • 4 eggs
  • 1 cup warm milk or water
Instructions
  1. Crumble the matzo (still leaving a few bigger pieces) into the warm milk or water, and allow to soak for about a minute, until the matzo is slightly soft but still has so texture to it.
  2. Drain the milk/water, and add 4 beaten eggs to the matzo. Mix to combine.
  3. Melt butter in a a pan over medium heat, and add the matzo/egg mixture. Allow to cook until golden brown and slightly set. Then flip, and brown the other side.
  4. Remove the matzo brei and cut into servings. Add your favorite toppings and enjoy!
