Spinach Pesto

Ingredients
  • 1 bag/bunch of baby spinach
  • 1 small clove of garlic
  • ¼ cup grated parmesan cheese (omit for a vegan version, and boost the amount of salt)
  • ¼ cup+ of olive oil
  • Salt to taste
Instructions
  1. Add the clove of garlic to the bowl of a food processor and pulse until finely minced
  2. Add spinach and leave processor on, chopping spinach up finely
  3. Stream in olive oil (you may need more than ¼ cup depending on the amount of spinach) until pesto reaches your desired consistancy
  4. Add parmesan cheese (if using) and salt to taste (you will need more salt if not using the cheese) Pulse food processor a few times until cheese is well combined
