Easy Slow Roasted Pork Ribs

With all the craziness happening in the world right now, slow cooked meals are a bright point for me in days of staying home and social distancing. These easy slow roasted pork ribs are perfect for those busy days at home: they take a long time, but are super easy to prepare, leaving you lots of time to fill your day with all sorts of other chores.

The world is a scary place at the moment. But there is one thing that has been helping me through all the uncertainty, anxiety, and longing for social contact: food. In my family, as embodied by the spirit of this blog, food has always been what brings us together. And while we can’t be together right now, at least physically, we can still take comfort in that undeniable nourishment that food provides for us, body and soul. For me, long days at home mean more time to make all those slow cooked meals that normally would be too time consuming. And while not a family recipe (although those are coming, I need to be reminded or noisy and crowded Sunday dinners), these slow cooked pork ribs are the epitome of comfort food.

These ribs, while needing a long time to cook, really could not be easier to make. They start with a simple and smoky dry rub: season salt, smoked paprika, chili powder, onion powder and cumin. The ribs are then cooked low and slow, for 3 or 4 hours until the meat is completely tender and falling off the bone, and then they’re slathered with BBQ sauce and broiled until that sauce gets nice and sticky. I used s store bought spicy honey sauce, but if you’re ambitious or you have the time (I’m sure you do), feel free to go home-made for the sauce.

These slow roasted ribs take a long time to cook, but almost no time to prepare, making them the perfect dinner for a long day at home

Serves: 4
Ingredients
  • 4lb pork spare ribs
  • 1 cup BBQ sauce of choice
  • For rub:
  • 1 tablespoon season salt
  • ½ tablespoon smoked paprika
  • ½ tablespoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
Instructions
  1. Preheat oven to 250.
  2. Combine seasoning in a small bowl. Generously rub onto ribs.
  3. Place ribs on lined baking sheet or shallow baking dish and wrap top tightly with foil. Bake for 3-4 hours, until meat is tender, flipping ribs once halfway through cooking.
  4. Turn oven up to broil. Generously coat ribs with BBQ sauce and broil for 15 minutes, until sauce is caramelized.
